This Ethiopian coffee is Calibration Coffee Lab's first honey processed coffee. Honey processing is where some of the coffee cherry fruit is removed prior to fermentation, so it is in between a natural process and a washed process. This leads to a smooth washed-like body with some of the natural process flavors like stone-fruits.

This particular coffee has a really nice smooth tea-like body with flavors of brown sugar, pear, and peach. The peach notes really come out as the coffee cools. We recommend grinding coarser than normal to bring out the best flavors.

 

About This Coffee:

The Kayon Mountain Coffee Farm is 500 hectares with about 300 hectares planted
in coffee and has been owned and operated by Ismael Hassen Aredo and his family
since 2012. It is located 510 kilometers south of Addis Ababa, and the property
crosses the border of two villages—Taro and Sewana—located in the Oromia
region, in the Guji zone of the Shakiso district of Ethiopia. Ismael oversees a staff of
25 permanent full-time and 300 seasonal employees, and the farm management
offers free transportation services as well as financial support for building schools
and administration buildings for the community. The farm competes with a nearby
mining village for seasonal workers, so Ismael and his family tend to pay higher
wages to their pickers in order to incentivize them returning year after year. Kayon
Mountain farm has a nursery on-site and utilizes shade (acacia and other
indigenous trees) to protect the coffee as well as for creating compost to fertilize
naturally. Ismael is meticulous about not only the structure and management of the
farm itself but also the harvesting and processing.

What's the turnaround time for coffee orders?

Coffee is typically roasted on Mondays and shipped out the next day following QC. It is possible that your coffee is deemed fresh enough to ship if I have any roasted stock and shipped out soon after ordering. e.g. an order is placed on Thursday and I still have some of that coffee that was roasted on Monday, then I may be able to ship right away.

What shipping options do you offer?

We offer flat rate shipping of $5 for all orders under $50.

You can also choose free local delivery if you live in the 29609 or 29601 zip code. You will automatically see this option at checkout if you qualify.

Finally, you can pick up your order for free at 400 Birnie St every Thursday from 4-6pm.

How does local pick up work?

Local pick-up is available at the lab on Thursdays from 4-6PM by appointment only. This option is for online orders placed in advance. I will notify you by email that your order is ready for pick-up, with exact access instructions. The location is 400 Birnie St, Greenville, SC 29611.
