Honey processing is where some of the coffee cherry fruit is removed prior to fermentation, so it is in between a natural process and a washed process. This leads to a smooth washed-like body with some of the natural process flavors like stone-fruits.\u003c\/p\u003e\n\u003cp\u003eThis particular coffee has a really nice smooth tea-like body with flavors of brown sugar, pear, and peach. The peach notes really come out as the coffee cools. It is located 510 kilometers south of Addis Ababa, and the property\u003cbr\u003ecrosses the border of two villages—Taro and Sewana—located in the Oromia\u003cbr\u003eregion, in the Guji zone of the Shakiso district of Ethiopia. Ismael oversees a staff of\u003cbr\u003e25 permanent full-time and 300 seasonal employees, and the farm management\u003cbr\u003eoffers free transportation services as well as financial support for building schools\u003cbr\u003eand administration buildings for the community. The farm competes with a nearby\u003cbr\u003emining village for seasonal workers, so Ismael and his family tend to pay higher\u003cbr\u003ewages to their pickers in order to incentivize them returning year after year. Kayon\u003cbr\u003eMountain farm has a nursery on-site and utilizes shade (acacia and other\u003cbr\u003eindigenous trees) to protect the coffee as well as for creating compost to fertilize\u003cbr\u003enaturally.
